ABOUT THE PRODUCER

Guilhem Viau is a tour de force in Pic St Loup in the Languedoc and his domaine has vineyard plots in 3 different areas of the appellation. Bergerie du Capucin translates to “The Friar’s Shepherd” – a nod to the domaine’s historical roots as grazing land for sheep farmers.

TERROIR & VINEYARD

Vineyards in Lauret and Valflaunès in the foothills of the Cévennes. Chalky-clay topsoils with marly subsoil.

VINIFICATION

Each variety vinified separately in stainless steel. Fermentation with selected yeasts at controlled temperatures. No oak.

TASTING NOTES

Brambly fruit aromas with spice. Ripe red berries, cherry, and blackberry with garrigue herbs. Smooth and rounded with a fresh, moreish finish.

VINIFICATION

Gently pressed. Each variety vinified separately at 16-17°C in stainless steel. Matured on fine lees with bâtonnage. No oak.

TASTING NOTES

Aromas of wild flowers and ripe apricot. White peach, citrus blossom, and wild herbs. Creamy texture with an uplifting citrus finish.
