Château Simon

ABOUT THE PRODUCER

The Dufour family has cultivated the vines and produced Barsac-Sauternes wine since 1814 on the unique soils of Château Simon. The ancestral know-how in winemaking has been passed from generation to generation and their vineyard holdings have expanded to the current total of 38 hectares, now including the appellations of Bordeaux, Graves and Barsac-Sauternes. Today, three generations of the Dufour family work together on the property and associate their talents to produce wines of excellent quality. Château Simon has followed the rules of “reasoned agriculture” since 1983.

TERROIR & VINEYARD

35 hectares across 4 communes. Lutte raisonnée since 1983. 6th generation Dufour family.

VINIFICATION

Temperature-controlled fermentation in stainless steel.

TASTING NOTES

Fresh and aromatic with citrus, grapefruit, and green apple. Crisp acidity and a clean, lively finish.

Château Simon Graves (Blanc)
TERROIR & VINEYARD

35 hectares across 4 communes: Barsac, Preignac, Pujols-sur-Ciron, Budos. Lutte raisonnée since 1983.

VINIFICATION

Three processes blended: Traditional, Pellicular (10-hour skin maceration), and Barrel-fermented (new oak). 12,000 bottles/year.

TASTING NOTES

Yellow-green tints. Citrus and white flowers. Pleasant and well-balanced with good complexity from the blended vinification.

TERROIR & VINEYARD

Vineyards in Barsac on limestone and clay. Lutte raisonnée since 1983. 6th generation.

VINIFICATION

Late harvest of botrytized grapes. Fermented and aged in barrel.

TASTING NOTES

Golden color with aromas of honey, apricot, and candied citrus. Rich and luscious with balanced sweetness and a long, complex finish.
